CACHUELA EXTREMEÑAEn Extremadura la cachuela es un paté exquisito, para tomarlo en el pan tostado del desayuno, de la merienda o la cena
1) Machacar los ajos, el comino y los clavos en la thermomix 5 seg. Velocidad 10.2) En un bol picar la carne en trozos, añadir la sal, pimienta, los clavos, ajos y las hojas de laurel. Dejar macerar 3 o 4 horas.
3) Una vez macerada la carne: poner en el vaso de la thermomix una cucharada o dos de la manteca 5 min., Temp. Varoma, Velocidad
"Velocidad cuchara" 4) Añadir el hígado 10 min., Temp. varoma, Velocidad
"Velocidad cuchara" .5) Picar la carne a gusto de cada uno (7 seg., Velocidad 5), sacar y reser var.
6) Poner la manteca en el vaso 5min., Temp. Varoma, Velocidad 1.
7) Incorporar la carne 10 min., Temp. 100º, Velocidad
"Velocidad cuchara" .si te gusta tipo paté triturar 10 a 15 segundos en velocidad 10.no olvides sacar las hojas de laurel
Echar una cucharada de pimentón y volverlo a poner a la misma temperatura y velocidad 1,30 min. Meter en un recipiente de plástico y dejar enfriar, conservar en el frigorífico y sacar en el momento de untar las tostadas.
